Andi Nuraida Angriyani is the National Hygiene Manager at Carrefour Indonesia, where her responsibilities include establishing hygiene and quality systems, policies and procedures, as well as monitoring and inspecting food safety performance of Carrefour Indonesia’s Fresh Division to ensure Indonesian food hygiene regulations and ISO 9001 requirements are met. Corazon Barba is the Resident Advisor for the Philippines of A2Z, the USAID Micronutrient and Child Blindness Project, and Emeritus Professor of the Institute of Human Nutrition and Food, College of Human Ecology, University of the Philippines, Los Baños, College, Laguna, Philippines. She is also a Visiting Faculty of the SEAMEO TROPMED Regional Center for Community Nutrition, University of Indonesia. Prior to her current position, Dr Barba served as Director of Food and Nutrition Research Institute of the Philippines (FNRI) from 2000 - 2006, and an Executive Trustee of the Nutrition Foundation of the Philippines. Dr Barba has served as consultant to various government and private institutions in the Philippines and overseas. She is a member of the Board of Directors of the International Life Sciences Institute (ILSI) Southeast Asia Region, and is also been actively involved in many collaborative undertakings with local and international institutions. Dr Barba has authored and co-authored numerous technical and popular publications. |

Ezzedine Boutrif is currently the Director of Nutrition and Consumer Protection Division of the Food and Agriculture Organization of the United Nations (FAO-UN) based in Rome, Italy, overseeing the coordination of FAO-UN’s activities on nutrition, food quality and safety, as well as the Division’s mandate to improve nutrition and protect consumers’ well-being by promoting the production, processing, distribution and consumption of nutritionally adequate and safe food. Dr Boutrif provides advice and assistance in scientific assessment on food safety, policy analysis, food and nutrition related strategies and program development in addition to establishment and implementation of regulatory frameworks for food control and quality assurance systems compatible with international standards, guidelines and recommendations, in particular those of the Codex Alimentarius. Prior to taking up this key position in June 2007, Dr Boutrif was Chief of Food Quality and Standards Service in the Division, having served FAO-UN since 1978. He holds a Ph.D in Food Science from Rutgers University, USA and is the author of over 80 publications, monographs and scientifi c papers. |

Alistair Boxhall is the joint leader of the EcoChemistry Research Group – a joint initiative between the University of York and the Defra Central Science Laboratory. The group specializes in the fate, eff ects and risk assessment of chemicals in the environment. Coordinating numerous projects in this area, Dr Boxhall also works with a number of national and international organizations including the UK Environment Agency, the UK Department for Environment, Food and Rural Aff airs, The Health and Safety Executive, The European Commission, the American Water Works Research Foundation and chemical manufacturers. He is also a member of the UK Government Veterinary Products Committee, a member of the UK Advisory Committee on Hazardous Substances, an ad hoc member of the European Food Safety Authority Working Group on Risk Assessment of Feed Additives and a member of the UK Government Nanotechnology Research Co-ordination Group Exposure Taskforce. With a broad-based training in environmental chemistry and toxicology from Leicester Polytechnic and the University of Sheffi eld, Dr Boxhall had previously worked at the Water Research Centre, Liverpool John Moores University and Cranfi eld University. |

Emma Bradley is a senior analytical chemist working in the Food Science Group at the Central Science Laboratory (CSL) in York (UK), where she has worked since 1999 and where she now leads the section working on migration from food contact materials. Dr Bradley has more than 10 years of experience in the analysis of food contaminants and chemical migration from food contact materials and articles. She acts as the secretary for and participates in several working groups within CEN TC194-SC1 (materials and articles intended for food contact) dealing with migration from plastics. She participates in the Community Reference Laboratory (CRL)-National Reference Laboratory (NRL) network for food contact materials as CSL is the UK National Reference Laboratory in this area. Dr Bradley previously worked for Brewing Research International, during which time she was involved in research projects investigating beer and cider fl avour and stability. She graduated with a PhD in Bio-organic Chemistry in 1996. |

Mario Capanzana is currently the Director of the Food and Nutrition Research Institute, Department of Science and Technology. His research interests are in the areas of food fortifi cation, functional foods, food quality and safety and technology transfer. He is also the Project Director for the 7th Nationwide Nutrition Survey being conducted by the FNRI. Dr. Capanzana has authored a number of scientific articles in peer reviewed local and international journals as well as other technical papers. He is also presently the President of the Philippine Association of Nutrition and President/Convenor of the Philippine Food Science and Technology Council. He obtained a post graduate diploma in Applied Food Science and Technology from Hawkesbury Agricultural Knowledge in Richmond, New Southwales, Australia and PhD in Food Science from the same university as AUSAID Fellow. |

Junshi Chen is the Director of the Chinese Center of Disease control in China and also serves as the Director of the ILSI Focal Point in Beijing. For more than 40, years he has conducted research in the areas of nutrition and food safety at the Institute of Nutrition and Food Hygiene, Chinese Academy of Preventive Medicine. Vanee Chonhenchob is the Associate Dean for International Affairs at the Faculty of Agro- Industry of Kasetsart University (Thailand). Prior to her current position, Dr Chonhenchob was the Head of the Department of Packaging Technology at the same university. Her research interests are on food packaging, packaging and distribution of fresh produce, permeability and shelf life of food and fresh produce, distribution measurement and analysis, as well as packaging fi lm development. In addition to her current appointment, Dr Chonhenchob is also a member of the Board of Directors of the International Association of Packaging Research Institutes and Advisor to the Thai Packaging Association. She has several peer-reviewed publications in technical journals and has presented on packaging and related topics in local and international conferences. Dr Chonhenchob received her Ph.D. in Food Science from Michigan State University (USA), and was awarded the Outstanding Technologist Award by the Foundation for the Promotion of Science and Technology under the Patronage of His Majesty the King, Thailand in 2005. |

Maria Theresa Correa-Cerbolles is a Food-Drug Regulation Officer III (Inspection) at the Bureau of Food and Drugs (BFAD), Philippines. Her responsibilities include acting as lead auditor during inspection of food manufacturing establishments, monitoring and evaluating the compliance of food establishments based on BFAD mandates and other existing rules and regulations, and providing technical assistance in the development of Philippine National Standards of food products in close coordination with other regulatory agencies. Prior to joining BFAD, Mrs Correa-Cerbolles was a food development officer and food technologist at various food companies. She has also been a speaker at numerous meetings. Mrs Correa-Cerbolles graduated from the University of Philippines at Diliman with a Bachelor degree in Food Technology. |

Gary Dykes is Director of Food Safety and Quality at Food Science Australia. He manages a broad research program in food safety and quality with a compliment of 40 staff and 15 postgraduate students. He previously held a joint appointment with Food Science Australia and the School of Land, Crop and Food Sciences at the University of Queensland in Brisbane. Dr Dykes has a broad interest in food science and related issues and has published widely in the area. He has also worked in various research-based positions in South Africa, New Zealand and Canada. His current research interests focus on the persistence of bacteria in foods and food processing environments with an emphasis on attachment and biofi lm formation as related to the physicochemical properties of bacteria and materials. Dr Dykes has a PhD in Food Microbiology from the University of the Witwatersrand in South Africa. |

Dedi Fardiaz is a Professor of Food Science at the Bogor Agricultural University, Indonesia and is also the Deputy Chairman of Food Safety and Hazardous Substance Control, National Agency for Drug and Food Control, Indonesia. Dr Fardiaz graduated from Bogor Agricultural University and received his MSc and Ph.D in Food Science from Michigan State University, USA. Prior to his current position, he served as the Associate Director for Academic Affairs, Graduate Program, Bogor Agricultural University, among others. From April 2000 to March 2001, he served as an Advisor to the State Minister of Research and Technology in food affairs. He also serves actively as President of the Indonesian Association of Food Technologists. |

Bonnie Field is with Food Standards Australia New Zealand in their Risk Assessment – Public Health Nutrition Section where she is a senior nutritionist. She managed the project to mandate the addition of folic acid to wheat flour for bread making in Australia and to bread in New Zealand. This project was completed in 2007. More recently, Ms Field has had experience with assessing the risk of the addition of substances to infant formula and leading the agency’s discussion on its response to a recent national policy guideline on the “Addition to Food of Substances other than Vitamins and Minerals”– such as novel foods and nutritive substances. In her 25 years’ experience, she has worked predominantly in government positions but also in academia. Most notably, she worked for a decade in the national monitoring of population health, cardiovascular disease, diabetes and nutrition at the Australian Institute of Health & Welfare and the University of Queensland, and authored several publications associated with this work. Ms Field has an Honours degree in Applied Science (Rural Technology), Graduate Diplomas in Information Processing and Population Health, and a Master of Public Health with a major in public health nutrition. |

Rodolfo Florentino is Chairman-President of the Nutrition Foundation of the Philippines, and has served as Director of the Food and Nutrition Research Institute (FNRI), Philippines from 1983 to 1997. Dr Florentino is a Fellow of the International Union of Nutrition Science (IUNS) and member of the WHO Expert Advisory Panel on Nutrition. He is also a Fellow of the Philippine Association for the Advancement of Science, and member of the National Research Council of the Philippines. Dr Florentino currently serves as member of the Board of Directors of the Philippine Association for the Study of Overweight, Obesity (PASOO) and the Osteoporosis Society of the Philippines (OSPFI). He is an internationaly recognized veteran of the Nutrition community, having worked in this fi eld since 1958 and has published numerous papers in scientific journals and received several awards for his achievements. Dr Florentino received his Clinical Medical degree from Vanderbilt University, USA. He has served as ILSI SEA Region Scientifi c Director from 1994 to 2008, and is Scientifi c Coordinator for the ILSI SEA Region Country Committee in the Philippines. |

George Fuller is the Executive Director of the Asian Food Information Centre (AFIC). AFIC is a science-based resource on nutrition, health and food safety for the Asian region. Prior to joining AFIC in 2008, Dr Fuller was the Executive Director of CropLife Asia, based in Bangkok, where he oversaw the strategic planning and operations of the Association in the areas of product stewardship, regulatory policy, biotechnology acceptance and communications. From 1982 to 2002, Dr Fuller was with the Monsanto Company and worked in a variety of positions relating to international regulatory approvals of crop protection and biotechnology products. From 1997 through 2002, he concentrated on regulatory acceptance of biotechnology in the Asia-Pacific region. Dr Fuller received his Bachelors degree in Chemistry from Macalester College, his Master’s degree from the University of California, Berkeley (USA) and his Ph.D. in Bio-organic Chemistry from the University of British Columbia (Canada). Don Gilliland is a Research Scientist in the Global Research Services Department at Abbott Nutrition, a Division of Abbott Laboratories. In this capacity, he is the lead scientist directing the development, validation and implementation of LC-MS/MS based methods for determination of water-soluble and oil-soluble vitamins in Infant and Adult Nutritional products. He is also an active participant in the current AOAC initiative to review and update reference methods for Infant Formula testing. Dr Gilliland has been with Abbott Nutrition for over 15 years. During his tenure, he has held various positions involving the evaluation, development and implementation of analytical methodologies for ingredient characterization and nutrient quantitation in Infant and Medical Nutritional foods. Thomas Gude is Deputy Head of Swiss Quality Testing Services (SQTS) within Migros, the biggest retailer in Switzerland. Having held this position for the past 5 years, Dr Gude heads the laboratories dealing with food and non-food analysis as well as risk assessments. Prior to his current appointment, Dr Gude worked in the pharmaceutical and chemical industry specifically, Schering, Roche and Solutia where for eight years he worked in the areas of Pharmakokinetic and Toxikokinetic, Enviromental, Safety and Health and Quality Management. He was also previously Laboratory Head at EC-Reference Laboratory in Berlin, Germany, where he engaged with Residue Analysis. Dr Gude then earned his Ph.D from the Technical University of Berlin, Germany in the field of Veterinary Drug Residue Analysis during which period he also served as a scientist at the Federal Health Institute in Berlin focusing on the area of Veterinary Drug Registration. |

Paul Hepburn is the Programme Director at the Safety and Environmental Assurance Centre (SEAC) of Unilever in the United Kingdom, having worked for Unilever for 18 years. Prior to joining Unilever, Dr Hepburn worked in the contract research industry, coordinating the safety evaluation and the world-wide regulatory approval of a number of novel foods, including plant sterols, the cholesterol-lowering ingredient now used in a variety of foods. Dr Hepburn has been actively involved with ILSI Europe for many years and is currently a member of the ILSI Europe Novel Foods & Nanotechnology Task Force. Dr Hepburn is a toxicologist by training and is on the European Register of Toxicologists. He received his PhD in 1990 in Experimental Cancer Chemotherapy from the Institute of Pharmaceutical Sciences at Aston University in Birmingham. |

Anna Lammerding is Chief of the Microbial Food Safety Risk Assessment Unit at the Laboratory for Foodborne Zoonoses, Public Health Agency of Canada, in Guelph, Ontario. She has worked with Agriculture and Agri-Food Canada, and Health Canada before joining the Public Health Agency of Canada in 2004. Dr Lammerding is also an Associate Member of the Faculty of Graduate Studies, University of Guelph, and Associate Director of the Canadian Research Institute for Food Safety (CRIFS). She has served on the U.S. National Advisory Committee for Microbiological Criteria in Foods (NACMCF), and is currently a member of the International Commission on Microbiological Specifications for Foods (ICMSF), a delegate to the Codex Committee on Food Hygiene, and has participated on the FAO/WHO Joint Expert Group on Microbial Risk Assessment for several years. In 2003, she served as President of the International Association for Food Protection (IAFP) and has received awards from IAFP, the Ontario Food Protection Association, the Institute of Food Technologists, and the Canadian government. She is actively involved in a number of international expert working groups addressing issues of risk assessment and risk management, data needs and applications. A Ph.D. graduate from the University of Wisconsin-Madison (USA), Dr Lammerding has 50 publications on food safety subjects, and has given more than 100 presentations and workshops worldwide. |

Mathew Lau is currently the Deputy Director of the School of Chemical & Life Sciences in Nanyang Polytechnic, Singapore. Prior to joining Nanyang Polytechnic, Dr Lau was the General Manager of Silliker Pte Ltd in Singapore. Dr Lau is a microbiologist and molecular biologist with over a decade of experience in Food Safety and Food Quality. He served as lead researcher at the Nanyang Polytechnic’s Applied Research Group in Singapore. He was also a visiting lecturer at the University of New South Wales, Australia and a visiting researcher at Harvard University, USA. Dr Lau holds three patents, and has published several papers in journals in the area of microbiology. |

Terence Lau is the Chief Operating Officer and General Manager of Hai Kang Life Corporation Limited, a Hong Kong-based biotechnology company founded in 1999 which specializes in the R&D and commercialization of molecular diagnostics for clinical, veterinary and food testing applications. He oversees all aspects of the operations and business development of the company and its subsidiaries to maintain their commitment to excellence. Hai Kang Life was the first and only ISO17025 accredited commercial laboratory for GMO testing in Hong Kong and a pioneer in Asia. Prior to joining Hai Kang Life Corporation Limited, Dr Lau had been the founding member and key executive of two Hong Kong biotechnology companies specializing in offering DNA-related products and services. He is currently also the Adjunct Investigator at the Academy of Agricultural Sciences of the Jilin Province, China and Specialist Advisor of the Infectious Disease Center of Peking University, China. Dr Lau has co-authored numerous publications in peer-reviewed scientific journals in the field of neuroscience and molecular biology and is the inventor of over 14 granted patents with numerous others pending. He holds a B.Sc. (Hons) in Animal and Plant Biotechnology from the University of Hong Kong, an M.Phil. in Biology from the Hong Kong University of Science and Technology and a Ph.D in Physiology from Peking University, China. |

David Lineback is a Senior Fellow of the Joint Institute for Food Safety and Applied Nutrition (JIFSAN) at the University of Maryland at College Park (USA), where he was previously the Director from 1998 to 2005. Dr Lineback is a carbohydrate chemist and food scientist with an extensive and distinguished career in academia. He has served as Dean of the College of Agriculture and as Professor in the Department of Food Science and Toxicology at the University of Idaho (USA) and was Head of the Departments of Food Science at Pennsylvania State University and North Carolina State University. Dr Lineback has served on the faculty of the University of Nebraska and Kansas State University. He is active in the AACC International (formerly the American Association of Cereal Chemists) and the Institute of Food Technologists, having been President of both. He has also been active in the Council for Agricultural Science and Technology (CAST), serving on the Board of Directors, the Executive Committee, and as President. Dr Lineback currently serves on the Governing Council and the Management Committee of the International Union of Food Science and Technology (IUFoST). |

Alicia Lustre is Director of the Food Development Center (FDC) of the National Food Authority, Department of Agriculture, Philippines. She is also Head of the Joint Management Committee for the Harmonization of Agriculture and Certifi cation Programs in the government, the Philippine Focal Point and Chairperson of the ASEAN Sub-Committee on Food Science and Technology of the ASEAN Committee on Food Additives and Contaminants. Dr Lustre has served as an international consultant to FAO and various countries in Southeast Asia including Vietnam and the Kingdom of Tonga, as well as a local consultant to various government agencies. Her field of experience is in food standards and regulations, food handling and processing, food testing and quality control, and management of research and training programs for the food industry. |

Hyun Jin Park is Adjunct Professor in the Department of Packaging Science, professor at the graduate school of Biotechnology, and the director of the Functional Food Research Center at Korea University in Seoul, Korea. His research interests cover a broad area of food engineering with particular attention on biopolymer and/or degradable fi lms, coatings and capsules production and application. Dr. Park has extensive experience in research and teaching. Prior to his current position, he was an Adjunct Assistant Professor in the Department of Packaging Science and Department of Agricultural and Biological Engineering at Clemson University, USA. John Ruff is the President of the International Life Sciences Institute (ILSI). He retired in 2008 as Senior Vice President of Global Quality, Scientific Affairs and Nutrition at Kraft Foods. During his 36 year career with Kraft and the former General Foods, Mr Ruff worked in six countries and gained experience in product and process development in beverages, coffee, confectionery, desserts and meals. He has led major basic research programs in sugar and salt substitutes, food safety intiatives and greenfield site startups. Mr Ruff headed the R&D for both Kraft International and North American businesses where he successfully integrated the technical operations of numerous acquisitions and established global centers of expertise to maximise R&D eff ectiveness. In his most recent role, Mr Ruff established and led a worldwide advisory council comprising external experts who have helped guide Kraft’s recent health and wellness initiatives. He is past Chair of the Food Processors Association (NFPA), past Chair of the IFT Foundation, and a Fellow of the Institute of Food Science and Technology (IFST) in the United Kingdom. He also sits on the Board of the Institute of Food Technologists (IFT) and the Joffrey Ballet. Mr Ruff obtained a Master degree in Biochemistry from Cambridge University (UK). |

Jorgen Schlundt is currently the Director, Department of Food Safety, Zoonoses and Foodborne Diseases of the World Health Organisation (WHO). He has also been Acting Director for the Department of Nutrition for Health and Development since 2005. Dr Schlundt joined WHO in 1999 after serving as head of Division of Microbiological Safety, Institute of Food Safety and Toxicology.at the Danish government’s Veterinary and Food Administration, where he worked extensively in the area of human health effects of microorganisms and chemical substances in food and in the environment, including assessment of biotechnology products. One of Dr Schlundt’s key activities is in the improvement of present food safety systems at national and international levels. He participates in scientific evaluation at OECD, EU and FAO/WHO Food Standards Program in which Codex is the active arm. Dr Schlundt received both his D.V.M and Ph.D. Microbiology at the Royal Veterinary and Agricultural University, Copenhagen, Denmark. He has over 62 publications, of which 30 are in peer review journals. |

Geoffry Smith is the Global Director, Health Chelates for Akzo Nobel, and directs the international business for these compounds in food and nutrition as well as pharmaceutical applications. He is responsible for the global project within Akzo Nobel addressing the global problems of iron deficiency anemia. In addition, Mr Smith directs Asia Pacific activities for Akzo Nobel’s Innovation Unit. He is a twenty-five year veteran of the chemical industry in Asia Pacific, and has resided in Singapore for more than 14 years. Mr Smith is the President of ILSI SEA Region based in Singapore, and he is a member of the Nutrition Society of the UK and the American Chemical Society. He previously worked with Akzo Nobel in the Netherlands, but is originally from San Francisco, California. |

Gordon Tai is the District Manager for the International Distributors Operation of Agilent Technologies’ Life Science and Chemical Analysis (LSCA) Group. He has sales, product support and channel management responsibility for all distributors in South East Asia. He joined Agilent in 2003, and brings with him many years of liquid chromatography and mass spectrometry expertise and experience. He has held various positions as an application chemist, validation specialist and product specialist. Mr Tai holds a Master of Science Degree in Agricultural Chemistry for the toxicology of chiral compound of organophosphorus pesticide. He has also successfully completed several food safety laboratory projects in the region. |

Kumiko Takanashi is the Scientific Program Manager of ILSI Japan, Center for Health Promotion in Japan. She is also the principal investigator in a community project for improving safe water supply, nutrition and health environment in three rural communes in Vietnam (Project SWAN). Ms Takanashi has extensive experience in nutritional assessments and research. Ms Takanashi received her Bachelor’s and Master’s degrees in Food Science from Showa Women’s University, Tokyo, Japan. She is also a registered dietitian, and is currently pursuing her Ph.D degree at the University of Tokyo, Japan. |

Masami Takeuchi is a Food Safety Officer (Assessment) at the Nutrition and Consumer Protection Division of the Food and Agriculture Organization of the United Nations (FAO). Since joining FAO in 2006, Dr Takeuchi has been working on capacity building activities for food safety and quality, including field projects, training and development of tools, manuals and guidelines. Starting in 2008, her responsibilities include dealing with scientific advice on food safety, especially in the field of risk assessment. Before joining FAO, Dr Takeuchi was a prolific researcher and lecturer at various universities including Washington State University (USA), University of Idaho (USA) Kasetsart University (Thailand) and Chulalongkorn University (Thailand). She has also organized scientific meetings and training courses on food safety-related topics, and is the author of several peer-reviewed articles and technical reports. Dr Takeuchi received her Ph.D in Food Science and Human Nutrition with a minor in Statistics from Washington State University, Pullman, USA. |

Enrique Tayag is Director IV at the National Epidemiology Center (NEC) of the Department of Health, Philippines. Dr Tayag oversees daily operations of the NEC, provides technical assistance in epidemiology, surveillance, outbreak investigation, surveys and risk assessment, curriculum design in Field Epidemiology Training and Field Management Training. He also coordinates with other local and international agencies with matters pertaining to epidemiology and surveillance. Dr Tayag was past President of the Philippine Society for Microbiology and Infectious Diseases, and past President of the Philippine Foundation for Vaccination. Trained as a medical doctor, he has also acted as a consultant for Clinical Practice Guidelines on TB diagnosis and treatment. Dr Tayag was awarded the Secretary of Health Award for Outstanding Epidemiologist in 1998. |

Tee E Siong is a nutrition consultant for TES NutriHealth Strategic Consultancy. He was Head of the Cardiovascular, Diabetes and Nutrition Research Centre of the Institute for Medical Research (IMR) in Kuala Lumpur until his retirement in February 2002, after serving for 30 years. His main areas of interest and research were in community nutrition, nutritional value of foods and food regulatory aff airs. He is currently Nutrition Advisor to the Food Safety and Quality Division of the Ministry of Health Malaysia and in that capacity is Chair person of a number of sub-committees including the National Codex Sub-Committee on Nutrition and Foods for Special Dietary Uses, Expert Working Committee on Nutrition, Health Claims and Advertisement; and Working Group on Food/Drug Interphase products. Dr Tee has published some 150 scientifi c articles and papers and made over 200 presentations on various aspects of food and nutrition in seminars and conferences within and outside the country. |
